From January 9 to 31, 2026, the Restaurant de l’ITHQ will pay tribute to a figure who deeply shaped culinary education and inspired generations of chefs we know and admire today: Mr. Jean-Paul Grappe, former ITHQ culinary instructor and passionate ambassador for Québec products.
About Jean-Paul Grappe
Originally from France, Jean-Paul Grappe came to Canada to oversee food services at the French Pavilion during Expo 67, before settling permanently in Québec. A renowned chef, he contributed for nearly two decades to the influence and visibility of French cuisine.
In 1984, he joined the ITHQ and discovered what would become his true calling: teaching. For more than 20 years, he trained passionate young chefs, nurturing their appreciation for local ingredients. His curiosity, generosity, and deep respect for the craft left a lasting imprint on modern Québec gastronomy.
What to expect
Throughout January, our lunch and dinner menus will be inspired by Chef Grappe’s iconic dishes:
- Tuesday, Wednesday and Thursday evenings: 3-course table d’hôte menu for $64 per person.
- Friday and Saturday evenings: à la carte dishes or a 5-course tasting menu for $94 per person (+ $60 for wine pairings).
- Weekday lunches: appetizer and daily main course inspired by the chef’s classics.
